The carrot (Daucus carota L.) is a bi-annual species, belonging to the Apiaceae family. After tomatoes, carrots are now the most important vegetable in the EU in terms of quantity. Since the autumn varieties can be stored well, they are available almost all year round from domestic production. However, almost only the orange varieties still play a role. With the return to old varieties, yellow and white varieties are coming back onto the market.
